Cold wet day is soup day

This is from our new cookbook, it is one of my favorites and perfect for a wet cool fall day "Italian Soup" (Don't ask, just eat it)

1 pound spicy ground sausage

1 green bell pepper, seeded and finely chopped

1 red bell pepper, seeded and finely chopped

2 tablespoons olive oil

1 yellow onion, finely chopped

1 vine cherry tomatoes, halved and seeded

1 tablespoon ground oregano

1 teaspoon cayenne pepper

1 teaspoon Cajun seasoning

1 (32-ounce) container beef broth

1 (15-ounce) can tomato sauce

1 (12-ounce) can tomato paste

2 cups cooked elbow macaroni

Combine the sausage, green and red pepper, olive oil, and onion

in a large soup pot cook over high heat until the sausage is halfway

done, about 8 minutes. Reduce the heat to medium, add the

tomatoes, oregano, cayenne, and Cajun seasoning, mix well, and

cook for 20 to 30 minutes. Stir in the beef broth, tomato sauce, and

tomato paste and cook for 20 minutes more. Finally, add the cooked

macaroni and cook for 5 minutes to heat through.

This is great with crusty bread and an ice-cold beer!
