Whether you are cooking a ham, turkey or prime rib this year for Christmas Eve or Christmas dinner, mash potatoes always seem to make there way into the mix. Try something different this year while still keeping the mash potato theme with “Italian Rosemary Red Mash”.


6 Red potatoes quartered (leave skin on)

3 cups chicken broth

2 cloves of garlic smashed opened

2 sprigs of fresh rosemary finely coursed

1 cup parmesan cheese

2 tablespoons unsalted butter

½ cup Italian parsley chopped


  1. Boil your potatoes in chicken broth for 10 minutes with garlic
  2. Strain the broth out when done leaving about ½ cup of broth aside from boil
  3. Using a potato masher or large spoon add ½ cup of broth, rosemary, parmesan cheese, butter and mash potatoes down. Salt and Pepper to flavor
  4. Sprinkle Italian parsley on top and serve


Serving suggestions: No gravy necessary for these potatoes but if you do I would suggest a red wine gravy.
