Potato Cheddar Soup
Serves 4 to 6

2 cups peeled and cubed red potatoes
4 tablespoons (½ stick) unsalted butter
1 white onion, chopped
2 tablespoons all-purpose flour
½ teaspoon sugar
3 cups 2% milk
1½ cups shredded cheddar cheese
2 cups chicken broth
1 cup diced ham
Salt and black pepper


Fill a large saucepan with water, add your potatoes, and bring to a
boil over medium-high heat. Cook until the potatoes are fork-tender,
about 15 minutes, then reserve 1 cup of the boiling water and discard
the rest.
To the potatoes, add the butter, onion, flour, sugar, reserved potato water, milk, cheese, chicken broth, and ham. Mix well and cook on low heat for about 20 minutes, stirring often. Salt and pepper to your liking.
The whole thing is done when all the ingredients come together and begin to thicken when stirring.
