Stuffed French Toast
Serves 4 to 6

1 (21-ounce) can apple
pie filling
1 large (16-ounce) loaf
French bread
6 large eggs
½ cup 2% milk
1 tablespoon ground
cinnamon, plus more
for sprinkling
½ teaspoon ground nutmeg
1 tablespoon vanilla extract
2 tablespoons sugar
1 (8-ounce) container nondairy whipped topping
(we prefer Cool Whip)
Maple syrup, for serving


This is a great way to start your day every day and people will think
you’re a master cook because of how beautiful this recipe turns out.
Pour the apple pie filling into a small saucepan and set it over low
heat to warm up while you work on the French toast.
Cut your French bread into slices approximately ¾ inch thick and
set them aside. In a medium bowl, whip together the eggs, milk,
cinnamon, nutmeg, and vanilla extract. This is called an egg wash.
Take your French bread slices and dip them into the egg wash, making
sure all surfaces of the bread are soaked without drowning the
bread, either. You want just enough egg wash for all the flavors to
adhere to the surface of the bread.
Now lay your bread on a griddle or sauté pan on medium heat,
making sure to use nonstick spray so there’s no sticking. Sprinkle a
little of the sugar and some cinnamon on the surfaces of the bread
as it cooks. Once the bottom sides are golden brown, flip them
over and cook the other side until golden brown; this usually takes
about 5 minutes. Once the French toast is cooked, lay one slice on
a plate and spoon a layer of the apple pie filling over it. Lay another
piece of French toast on top of that, then put a heaping amount of
whipped topping on top. Sprinkle a little more cinnamon on everything
and you’re done! Serve with maple syrup.
